Pizza attempt #2

We're improving! Here are the results from our recent pizza attempt. :)


Okay, so I'll share the recipe from the "Favorite Brand Name Gluten-Free 3 Books in 1" 
3 cups gluten-free flour blend *
2 1/4 ounce active dry yeast
2 tsp xanthan gum
1 tsp salt
1 cup warm water
1/4 cup extra virgin olive oil
3 egg whites
1 tbsp honey
1 tsp cider vinegar (which I omitted, lol)

Mix flour blend, yeast, xanthan gum and salt in large bowl. Whisk water, olive oil, egg whites, honey and vinegar in a medium bowl. Beat wet ingredients into dry ingredients eith electric mixer at low speed until combined. Add additional water by tablespoonfuls until batter is smooth and thick. Beat at high-speed in 5 minutes, scraping bowl occasionally.

* flour blend:
1 cup white rice flour, 1 cup sourghum flour, 1 cup tapioca flour, 1 cup cornstarch, 1 cup almond or coconut flour. 
Blend together. Store in airtight container in the fridge, makes about 5 cups and can be doubled or tripled.

I could easily spend a lot of time and money in this store. In the past, the consolation was that I had to do a detour to go buy more tea... but now, one opened one block from my work. Nonetheless, David's Tea, you are a warm treat on a cold wintery night, or during the morning in a freezing office building...

quinoa goodness

It's been a couple months since my last post... I've been cooking a lot and trying some new recipes. Some have turned out good, and some have come out as "not bad" but perhaps can be modified with a bit more creativity. 
Here's a simple meal that is quite healthy:



Whole grain, gluten free quinoa pasta from Tru Roots some marinara sauce and fresh green beans. I took the picture before we sprinkled some parmesan cheese on there :) Which makes it especially scrumptious.
